  • bulk fermented at room temp 1 day
  • balled and cold fermented for 2 days
  • great dough structure
    • could be slightly more hydrated
  • dough takes 3+ hours to reach room temp
  • oven takes 2 hours to reach temp
  • used broil for 1st and 2nd bake was too much
    • improve:
      • 1st bake - regular bake dough and sauce for 2 minutes
      • 2nd bake - broil for 2 minutes with toppings

  • used Pizza bubble recipe
    • bread flour
  • dough was incredibly wet
    • improve:
      • incorporate wet ingredients into flour better at beginning
    • added more flour to compensate
    • techniques to improve hydration
